Cucumber mosaic virus (CMV) is a tremendous threat to vegetables across the globe, including in Pakistan. The present work was conducted to investigate the genetic variability of CMV isolates infecting pea and spinach vegetables in the Pothwar region of Pakistan. Serological-based surveys during 2016-2017 revealed 31.70% overall CMV disease incidence from pea and spinach crops. Triple-antibody sandwich enzyme-linked immunosorbent assay (TAS-ELISA) revealed that all the positive isolates belong to CMV subgroup II. Two selected cDNA from ELISA-positive samples representing each pea and spinach crops were PCR-amplified (ca.1100 bp) and sequenced corresponding to the CMV CP gene which shared 93.7% nucleotide identity with each other. Both the sequences of CMV pea (AAHAP) and spinach (AARS) isolates from Pakistan were submitted to GenBank as accession nos. MH119071 and MH119073, respectively. BLAST analysis revealed 93.4% sequence identity of AAHAP isolate with SpK (KC763473) from Iran while AARS isolate shared maximum identity (94.5%) with the strain 241 (AJ585519) from Australia and clustered with some reference isolates of CMV subgroup II from UK (Z12818) and USA (AF127976) in a Neighbour joining phylogenetic reconstruction. A total of 59 polymorphic (segregating) sites (S) with nucleotide diversity (π) of 0.06218 was evident while no INDEL event was observed in Pakistani isolates. The evolutionary distance of Pakistani CMV isolates was recorded as 0.0657 with each other and 0.0574-0.2964 with other CMV isolates reported elsewhere in the world. A frequent gene flow (Fst = 0.30478 <0.33) was observed between Pakistani and earlier reported CMV isolates. In genetic differentiation analysis, the value of three permutation-based statistical tests viz; Z (84.3011), Snn (0.82456), and Ks* (4.04042) were non-significant. Introdução: Os consumidores têm inúmeras preocupações em relação à saúde, dentre as quais o consumo elevado de aditivos químicos, como os conservantes, que ao reagir com substâncias presentes nos alimentos podem produzir compostos cancerígenos. Alguns vegetais, como o espinafre, podem ser fontes naturais desses conservantes, e sua aplicação pode aumentar a saudabilidade dos produtos cárneos. Objetivo: Avaliar os efeitos do extrato de espinafre como fonte de nitrito para conservação de linguiças frescais, armazenadas durante 35 dias sob refrigeração. Material e Método: Quatro formulações foram produzidas: controle positivo, com sal de cura comercial (CP), controle negativo, sem sal de cura (CN), extrato de espinafre (EE) e extrato de espinafre pré-convertido por bactérias nitrato-redutoras (EEPC). As linguiças foram avaliadas através da composição centesimal, cor, teor residual de nitrito, TBARS e avaliação microbiológica. Resultados: O sal de cura (CP) resultou em menores alterações na coloração das linguiças frescais. O TBARS aumentou aproximadamente 2,5 vezes (p<0,05) ao longo dos 35 dias, em todas as formulações, e os menores valores, ao final desse período, foram encontrados nas formulações CP e EEPC. Estas mesmas formulações apresentaram os maiores teores residuais de nitrito e menor contagem de BAL e enterobactérias (35 dias), o que comprova que o EEPC é tão eficiente quanto o sal de cura comercial como conservante em linguiça frescal armazenada sob refrigeração. Conclusão: O uso de EEPC pode ser uma alternativa promissora para a indústria cárnea, possibilitando o desenvolvimento de produtos clean label que atendam à demanda por produtos mais saudáveis.


Introduction: Consumers express concerns about chemical additives in the diet, including preservatives, which can produce carcinogenic compounds when interacting with substances present in food. Some vegetables, such as spinach, can be natural sources of preservatives, and their application can increase the healthiness of meat products. Objective: To evaluate the effects of spinach extract as a source of nitrite for the preservation of fresh sausages during 35 days of refrigerated storage. Material and Method: Four formulations were produced: positive control, with commercial curing salt (CP), negative control, without curing salt (CN), spinach extract (EE) and spinach extract pre-converted by nitrate-reducing bacteria (EEPC). The sausages were evaluated for proximate composition, color parameters, residual nitrite content, TBARS, and microbiological characterization. Results: The curing salt (CP) led to a few changes in the color of the fresh sausages. TBARS increased approximately 2.5 times (p<0.05) during the 35 days for all formulations, and the lowest values were found for the formulations CP and EEPC at the end of the storage. These formulations had the highest residual nitrite levels and the lowest LAB and enterobacteria count (35 days), which proves that EEPC is an effective preservative to replace commercial curing salt in fresh sausages subjected to refrigerated storage. Conclusion: The use of EEPC can be a promising alternative for the meat industry, enabling the development of clean-label products that meet the demand for healthier products.

This work aimed to evaluate the technical feasibility of lettuce, Indian spinach and taro intercropping under organic fertilizer. The experiment was performed at Água Limpa Farm, belonging to the University of Brasília, located in Brasília - DF, from October 2014 to June 2015. A completely randomized block design with seven treatments and four replications was used. Each experimental plot had 18 m2 (4.5 m x 4.0 m), totaling 28 plots. The following treatments were assessed: lettuce monoculture, Indian spinach monoculture, taro monoculture, lettuce/Indian spinach intercropping, lettuce/taro intercropping, Indian spinach/taro intercropping, and lettuce/Indian spinach/taro intercropping. In all treatments, the following spacings were used: 0.25 x 0.25 m (lettuce), 1.0 x 0.6 m (Indian spinach), and 1.0 x 0.3 m (taro). Crop production was evaluated from sample plants taken from the central part of each plot. Two harvests of lettuce, two of Indian spinach and one of taro were carried out during intercropping. In the first cycle, lettuce highest mean yield values were observed in the lettuce monoculture (3.5 kg m-2) and lettuce/Indian spinach intercropping (3.4 kg m-2). The crop reached the commercial size in both production cycles, except when intercropped with Indian spinach in the second cycle. The highest Indian spinach mean fresh mass was recorded in the lettuce/Indian spinach intercropping (974.7 g plant-1; first harvest) and monoculture (327.5 g plant-1; second harvest). The yield of taro rhizomes was significantly higher when intercropped with lettuce, showing a mean value of 16.8 kg m-2. The intercropping arrangements with lettuce increased yield of nonconventional vegetables. The conventional and nonconventional vegetables' intercropping technique increased species diversity in the area without interfering in the agronomic performance and quality of the crops.

Moringa leaves and spinach used as vegetables containing cyanogens and polyphenols having suspected antithyroidal activity; however, detailed studies in this aspect found unavailable. Goitrogenic/antithyroid potentiality of those plant foods of Indian origin was evaluated. To explore the goitrogenic/antithyroid effect of those plant foods cyanogenic glucosides, glucosinolates, thiocyanate and polyphenol content were measured. These plant foods were fed with diet regularly to adult male albino rats for 30 and 60 days respectively, followed by evaluation of morphological and functional status of thyroid,as thyroid gland weight, the activity status of thyroid hormone synthesizing enzymes viz. TPO, Na+-K+-ATPase, deiodinase I, thyroid hormone profiles, thyroid histoarchitecture as well as urinary iodine and thiocyanate. In moringa leaves and spinach fed diet, there was a significant increase in urinary excretion of thiocyanate and iodine, enlargement of thyroid gland along with hypertrophy of thyroid follicles and altered in the activities of thyroid hormone synthesizing enzymes with concomitant changes of thyroid hormone profiles. Effects were more severe in moringa leaves treated group than that of spinach. Biochemical analysis moringa leaves and spinach reveal that those are rich sources of goitrogens and their prolonged consumption gradually developed a relative state of biochemical and morphological hypothyroidism.

BACKGROUND/OBJECTIVES: The purposes of the study were to investigate folate intakes and plasma folate concentrations as well as estimate folate status in Korean healthy adults. SUBJECTS/METHODS: A total of 254 healthy 19- to 64-year-old adults (68 men and 186 women) living in Seoul metropolitan area, Gumi, and Kwangju, Korea participated. Three consecutive 24-hour dietary recalls, information on folate supplementation, and fasting blood samples were collected from the subjects. RESULTS: The mean dietary folate intakes were 587.4 and 499.2 µg dietary folate equivalent (DFE)/day for men and women, respectively. The median dietary intakes of men and women were 566.6 and 474.6 µg DFE/day, respectively. Forty subjects (16.7% of total) less total folate than the estimated average requirement (EAR). Folate intakes of 23.3% of men and 34.8% of women aged 19–29 years did not meet the EAR for folate. Major food sources consumed for dietary folate were baechukimchi (Chinese cabbage kimchi), rice, spinach, eggs, and laver, which provided 44% of dietary folate intake for the subjects. Plasma folate concentrations were 23.4 nmol/L for men and 28.3 nmol/L for women, and this level was significantly lower in men than in women. Approximately 13% of men and 3% of women were folate-deficient, and the percentages of subjects showing folate concentrations lower than 10 nmol/L were 27.9% of men and 6.4% of women. CONCLUSIONS: Folate intakes of Korean adults in this study were generally adequate. However, one-third of young adults had inadequate folate intakes.

ABSTRACT The intercropping is a production system that aims to provide increased yield with less environmental impact, due to greater efficiency in the use of natural resources and inputs involved in the production process. An experiment was carried out to evaluate the agronomic viability of kale and New Zealand spinach intercropping as a function of the spinach transplanting time. (0, 14, 28, 42, 56, 70, 84 and 98 days after transplanting of the kale). The total yield (TY) and yield per harvest (YH) of the kale in intercropping did not differ from those obtained in monoculture. The spinach TY was influenced by the transplanting time, the earlier the transplanting, the higher the TY. The spinach YH was not influenced by the transplanting time, but rather by the cultivation system. In intercropping, the spinach YH was 13.5% lower than in monoculture. The intercropping was agronomically feasible, since the land use efficiency index, which was not influenced by the transplanting time, had an average value of 1.71, indicating that the intercropping produced 71% more kale and spinach than the same area in monoculture. Competitiveness coefficient, aggressiveness and yield loss values showed that kale is the dominating species and spinach is the dominated.

The genus Peronospora, an obligate biotrophic group belonging to Oomycota, causes serious damage to a variety of wild and ornamental plants, as well as cultivated crops, such as beet, rose, spinach, and tobacco. To investigate the diversity of Peronospora species parasitic to Stellaria and Pseudostellaria (Caryophyllaceae) plants in Korea, we performed a morphological analysis on dried herbarium specimens and molecular phylogenetic inferences based on internal transcribed spacer rDNA and cox2 mitochondrial DNA sequences. As a result, it was confirmed that there are four species of Peronospora parasitic to specific species of Stellaria and Pseudostellaria, all of which were hitherto unrecorded in Korea: P. alsinearum (ex Stellaria media), P. stellariae-aquaticae (ex Stellaria aquatica), P. stellariae-uliginosae (ex Stellaria alsine), and P. pseudostellariae (ex Pseudostellaria palibiniana). In addition, Peronospora specimens parasitic to Pseudostellaria davidii differed morphologically from P. pseudostellariae owing to the large and ellipsoidal conidia; this morphological discrepancy was also validated by the high genetic divergence between the two species. Peronospora casparyi sp. nov. is described and illustrated here.

BACKGROUND/OBJECTS: When the functions involved in the ingestion of food occurs failure, not only loss of enjoyment of eating, it will be faced with protein-energy malnutrition. Dysmasesis and difficulty of swallowing occurs in various diseases, but it may be a major cause of aging, and elderly people with authoring and dysmasesis and difficulty of swallowing in the aging society is expected to increase rapidly. SUBJECTS/METHODS: In this study, we carried out a survey targeting nutritionists who work in elderly care facilities, and examined characteristics of offering of foods for elderly and the degree of demand of development of easily chewable and swallowable foods for the elderly who can crush foods and take that by their own tongues, and sometimes have difficulty in drinking water and tea. RESULTS: In elderly care facilities, it was found to provide a finely chopped food or ground food that was ground with water in a blender for elderly with dysmasesis. Elderly satisfaction of provided foods is appeared overall low. Results of investigating the applicability of foods for elderly and the reflection will of menus, were showed the highest response rate in a gelification method in molecular gastronomic science technics, and results of investigating the frequent food of the elderly; representative menu of beef, pork, white fish, anchovies and spinach, were showed Korean barbecue beef, hot pepper paste stir fried pork, pan fried white fish, stir fried anchovy, seasoned spinach were the highest offer frequency. CONCLUSIONS: This study will provide the fundamentals of the development of easily chewable and swallowable foods, gelification, for the elderly. The study will also illustrate that, in the elderly, food undergone gelification will reduce the risk of swallowing down to the wrong pipe and improve overall food preference.

Diets rich in fruits and vegetables reduce risk of adverse cardiovascular events. However, the constituents responsible for this effect have not been well established. Lately, the attention has been brought to vegetables with high nitrate content with evidence that this might represent a source of vasoprotective nitric oxide. We hypothesized that short-term consumption of spinach, a vegetable having high dietary nitrate content, can affect the arterial waveform indicative of arterial stiffness, as well as central and peripheral blood pressure (BP). Using a placebo-controlled, crossover design, 27 healthy participants were randomly assigned to receive either a high-nitrate (spinach; 845 mg nitrate/day) or low-nitrate soup (asparagus; 0.6 mg nitrate/day) for 7 days with a 1-week washout period. On days 1 and 7, profiles of augmentation index, central, and brachial BP were obtained over 180 min post-consumption in 4 fasted visits. A postprandial reduction in augmentation index was observed at 180 min on high-nitrate compared to low-nitrate intervention (-6.54 +/- 9.7% vs. -0.82 +/- 8.0%, p = 0.01) on Day 1, and from baseline on Day 7 (-6.93 +/- 8.7%, p < 0.001; high vs. low: -2.28 +/- 12.5%, p = 0.35), suggesting that the nitrate intervention is not associated with the development of tolerance for at least 7 days of continued supplementation. High vs. low-nitrate intervention also reduced central systolic (-3.39 +/- 5.6 mmHg, p = 0.004) and diastolic BP (-2.60 +/- 5.8 mmHg, p = 0.028) and brachial systolic BP (-3.48 +/- 7.4 mmHg, p = 0.022) at 180 min following 7-day supplementation only. These findings suggest that dietary nitrate from spinach may contribute to beneficial hemodynamic effects of vegetable-rich diets and highlights the potential of developing a targeted dietary approach in the management of elevated BP.

The rabbits in the experimental group consumed 100 g of freeze-dried spinach powder after a 24 h fasting period and sacrificed 2, 4, 8, 12 and 24 h later and in the control group sacrificed after the 24 h fasting period. The main CRCs in the liver were found to be chlorophyll (Chl a) and b, chlorophyllide (Chlide) a and b, pheophytin (Phe) a and b and pheophorbide (Pho) a and b, which reached their peak values at 8 h post-feeding. The gallbladder contained mainly Chlide a and a', Pho a and a', Pho b and b', which peaked their values at 2 h post-feeding. Pho a and b were consistently observed in the blood and peaked at 12 h post-feeding. The earlier appearance of Chlide a', Pho a' and Pho b' in the gallbladder compared to the liver indicated that these CRCs were compartmentalized differently and might undergo the same type of vectorialized transport as characterized for the bile salts. Pho levels peaked later in the blood compared to the liver, suggesting that Pho might be released into the peripheral blood circulation from the liver. In conclusion, Chlide and Pho were the principal Chl metabolites in the rabbits. Our data may expand our understanding of the metabolism and biodistribution of CRCs in the human body. A number of biological functions, including anti-oxidation, anti-tumor and anti-aging have recently been attributed to CRCs, it will be interesting to explore, if the binding of Chlide and Pho to other nutrients or trace metal ions in the body mediate their biological functions.

The present study aimed to determine the effects of different traditional cooking methods on folate (tetrahydrofolate - THF, 5-methyltetrahydrofolate - 5- MTHF and 5-formyltetrahydrofolate - 5-FTHF) retention in leafy vegetables. The analysis of folates was carried out by high performance liquid chromatography (HPLC), with detection by fluorescence, using gradient elution, mobile phase of acetonitrile and phosphate buffer solution. The retention of isomers in vegetables after cooking ranged from 17.0 % to 87.2 % for THF, 53.4 - 94.1% for 5-MTHF and 39.0 - 107.9% for 5-FTHF. The retention of folates depended on the food matrix, the kind of isomer, and the cooking methods used. It is recommended that one should have more control over the choices for methods and time of cooking and the amount of water used at home and at foodservice as well.


El presente estudio tuvo como objetivo determinar los efectos de los diferentes métodos de cocción tradicionales sobre la retención de folatos (tetrahidrofolato - THF, 5-metiltetrahidrofolato - 5- MTHF y 5-formiltetrahidrofolato - 5 FTHF) en hortalizas. El análisis de folatos se llevó a cabo por cromatografía líquida de alta resolución (CLAR), con detección por fluorescencia, usando elución en gradiente, fase móvil de acetonitrilo y solución tampón de fosfato. La retención de los isómeros en las hortalizas después de la cocción varió de 17,0% a 87,2% para THF, 53,4 a 94,1% para 5-MTHF y de 39,0 a 107,9% para 5- FTHF. La retención de folatos dependió de la matriz del alimento, el tipo de isómero, y los métodos de cocción utilizados. Se recomienda que uno debe tener más control sobre las opciones de métodos y tiempo de cocción y la cantidad de agua utilizada en el hogar y también en los servicio de alimentación.

Campylobacteriosis is a worldwide distributed zoonosis. One of the main virulence factors related to Campylobacter spp. in animals and humans is the cytolethal distending toxin (CDT), encoded by three adjacent genes (cdtA, cdtB, cdtC). The occurrence of Campylobacter spp. in samples of vegetables has not been reported in Brazil yet, and has seldom been described in the international literature. The detection of CDT in these strains has not been reported, either. The objectives of the present study were to determine the occurrence of Campylobacter spp. strains carrying virulence factors in samples of poultry and vegetables (lettuce and spinach) from different points of sale, thus verifying if vegetables are as an important vehicle for potentially virulent Campylobacter spp. strains as poultry. Twenty four strains were identified as Campylobacter jejuni by phenotypic and genotypic methods: 22 from broiler carcasses and two from lettuce samples. Three strains were identified as Campylobacter coli: two from broiler carcasses and one from lettuce. The presence of the cdt genes were detected in 20/24 (83.3%) C. jejuni strains, and 3/3 (100%) C. coli strains. The isolation of Campylobacter spp. strains with the cdt gene cluster in lettuce samples points to a new possible source of contamination, which could have an impact in the vegetable production chain and risk to public health. Results show that potentially virulent C. jejuni and C. coli strains remain viable in samples of broiler carcasses and vegetables at the points of sale.

Nos últimos anos, vegetais têm sido responsáveis por surtos de enfermidades transmitidas por alimentos (ETA) em diversas regiões do mundo por serem veículos dos mais diferentes micro-organismos patogênicos, entre eles Salmonella spp, Listeria monocytogenes e Escherichia coli produtora de toxina de Shiga (STEC). O uso de sanitizantes nem sempre reduz de maneira significativa a população de micro-organismos presentes nos vegetais, sendo necessária a aplicação de técnicas mais eficientes, entre elas, a radiação gama. Assim, os objetivos do presente estudo foram avaliar o efeito da irradiação na redução de STEC, Salmonella spp. e L. monocytogenes inoculadas em espinafre minimamente processado, bem como sobre os atributos físico-químicos e sensoriais do vegetal. Amostras de espinafre (Tetragonia expansa) foram inoculadas com um "pool" de cepas de Salmonella spp, um "pool" de cepas de L. monocytogenes e um "pool" de cepas de STEC, separadamente, e expostas às doses de 0; 0,2; 0,4; 0,6; 0,8 e 1,0 kGy. Os valores de D10 para Salmonella spp, L. monocytogenes e STEC foram, respectivamente, 0,19 a 0,20 kGy, 0,20 a 0,21 kGy e 0,17 kGy. Foram avaliados os comportamentos de Salmonella spp, L. monocytogenes e STEC em amostras de espinafre expostas à doses cinco vezes maiores do que o valor D10 obtido para cada micro-organismo: 1,0; 1,05 e 0,85 kGy, respectivamente, e em amostras não irradiadas armazenadas por 12 dias a (4±1) °C e a (10±1) °C. Os resultados mostram que as doses empregadas reduziram a população de Salmonella e de STEC em aproximadamente 6 ciclos log no dia zero tendo permanecido abaixo do limite de detecção (<10 UFC/g), mesmo após 12 dias de armazenamento em ambas as temperaturas. A dose de 1,05 kGy reduziu a população de L. monocytogenes em, aproximadamente, 5 log imediatamente após a irradiação, porém com recuperação de 2,62 log nas amostras armazenadas a (10±1) °C ao final do período de armazenamento. Amostras de espinafre expostas às doses de 1 e 1,5 kGy e a amostra-controle, mantidas sob refrigeração (4±1) ºC, foram utilizadas para a avaliação da vida de prateleira (VP), análise sensorial, análise de cor, determinação de ácido ascórbico, flavonoides, compostos fenólicos e capacidade antioxidante. A VP da amostra exposta à dose de 1 kGy foi de 15 dias, dois dias a mais que a da amostra-controle, enquanto a exposta a 1,5 kGy apresentou VP de 12 dias. Todas as amostras expostas à radiação foram aceitas pelos provadores. A irradiação não provocou alterações significativas na concentração de compostos fenólicos e atividade antioxidante, porém houve alteração na cor e na concentração de flavonoides. As estações do ano, por sua vez, tiveram influência sobre a coloração, concentração de compostos fenólicos e atividade antioxidante. Apesar da alteração na coloração ter sido observada na análise instrumental, esta não foi percebida pelos provadores durante a análise sensorial. O processo de irradiação mostrou ser uma boa alternativa para aumentar a segurança microbiológica de espinafre sem alterar as características sensoriais. No entanto, o uso das Boas Práticas de Fabricação nunca deve ser negligenciado


In recent years, fresh produce have been responsible for foodborne disease outbreaks worldwide, due to their contamination by different pathogenic microorganisms such as Salmonella spp., Listeria monocytogenes and Shiga toxin-producing Escherichia coli (STEC). The use of sanitizers does not always significantly reduce the microbial populations present in vegetables, and thus, the application of more efficient techniques such as gamma radiation, is required. The objectives of this study were to evaluate the effect of irradiation on the reduction of the populations of STEC, Salmonella spp. and L. monocytogenes, inoculated on minimally processed spinach, as well as to assess its effect on the sensory and physicochemical characteristics of the vegetable. Spinach (Tetragonia expansa) samples were individually inoculated, with a cocktail of three strains of Salmonella spp, three strains of L. monocytogenes and three strains of STEC and exposed to doses of 0, 0.2; 0.4; 0.6; 0.8 and 1.0 kGy. The D10 values determined in this study ranged from 0.19 to 0.20 kGy for Salmonella spp, 0.20 to 0.21 kGy for L. monocytogenes, and 0.17 kGy for STEC. The behavior of Salmonella spp., L. monocytogenes and STEC were evaluated in spinach samples exposed to doses of 1.0, 1.05 and 0.85 kGy, respectively, and in non-irradiated samples, stored for 12 days at (4±1) °C and (10±1) °C. The results showed that the populations of Salmonella and STEC were reduced at about 6 log, on day zero, and remained below the detection limit (<10 CFU/g) even after 12 days of storage at both temperatures tested. The 1.05 kGy dose reduced the population of L. monocytogenes in approximately 5 log, but in the samples stored at (10±1) °C, the growth of the microorganism (2,62 log) was observed at the end of the storage time. Spinach samples exposed to 1 and 1.5 kGy, as well as the control sample, all kept under refrigeration (4±1) °C were used for the evaluation of the product shelf life, sensory analysis, color analysis, determination of ascorbic acid, flavonoids, phenolic compounds and the antioxidant capacity. The samples exposed to 1 kGy displayed a shelf life of 15 days, two days longer than that observed for the control sample, while those exposed to 1.5 kGy showed a shelf life of 12 days. All samples exposed to radiation were accepted by the sensorial panel. The irradiation had no significant effect either on the concentration of phenolic compounds or on the antioxidant activity. Nevertheless, there was a reduction in the concentration of flavonoids and change on the color. The color, phenolic compounds concentration and antioxidant activity were influenced by the seasons of the year. Although the change in color was observed by instrumental analysis, this was not perceived by the panelists during sensory analysis. The irradiation process is a great alternative for microbiological safety purpose together with Good Manufacturing Practices

Eating cooked vegetables with rice is quite common in Jordan and worldwide. Dietary fibers of vegetables are expected to play a role in the glycemic control of meals. To study the postprandial glycemic and insulinemic effect of three cooked vegetables: mulukhiyah leaves [Corchorus olitorius], spinach [Spinacia oleracea] and carrots [Daucus carota]. The postprandial glycemic and insulinemic effect of the threecooked vegetables on steamed rice were studied by running the oral glucose tolerance tests on apparently healthy young adults, each of who served as his own control, using white bread as the reference. Insulin sensitivity was measured by calculating the composite insulin sensitivity index. The glycemic index [GI] of rice [84.2 +/- 10.5%] ingested with chicken broth was significantly lowered only by eating 120 g of mulukhiyah leaves [ML] and not by either carrots or spinach. The insulinemic index [II] of steamed white rice eaten with broth was significantly lowered by 120 g of ML [61.7 +/- 9.2%] and 150 g of spinach [42.9 +/- 9.0%]. Insulin sensitivity was only improved by spinach. All results are expressed as means +/- SEM and are considered statistically significant at P<0.05. The results also suggested that there was no significant difference between the calculated relative GI and relative II responses of the three cooked vegetables at the two assigned levels, each eaten with rice and broth compared to the corresponding GI or the II values of the individual foods from which they were composed of. Eating a relatively high portion of mulukhiyah leaves improves the glycemic response to white rice whereas only higher levels of carrots tended to improve the glycemic response of white rice, and spinach at either level had no apparent effect. While insulin level was lowered by the three tested vegetables, its sensitivity was improved by eating spinach only

There is little information on dietary vitamin K intake and nutritional status of daily requirements of vitamin K in Korea. The objective of this study was to investigate the vitamin K intake and major food sources of Vitamin K in Koreans. The survey data from the 2010-2011 Korean National Health and Nutrition Examination Survey of 7,792 subjects (aged 19-64 years) were examined. Total vitamin K intake was calculated from 24-hour dietary recall using a vitamin K food database, Computer Aided Nutritional analysis Program and the United States Department of Agriculture database. The geometric mean of vitamin K was estimated as 322.40 +/- 6.33 ug/day for men and 271.20 +/- 4.92 ug/day for women. Daily vitamin K intake increased significantly with age (p for trend < 0.001). The main food source of vitamin K was vegetables (72.84%), including cabbage kimchi (19.26%), spinach (17.38%), sesame leaves (7.11%), radish leaves (6.65%), spring onions (6.28%), and laver (4.82%), followed by seaweed, seasonings, and fat and oils. We observed that the vitamin K intake of Koreans was relatively higher than that reported by other studies in Western countries and differed depending on age.

The purpose of this study was to estimate the daily intake of vitamin A in Korean female university students. Vitamin A intake was estimated using an inconsecutive 3-day dietary intake survey from 481 young women. Vitamin A intake values were calculated based on the data in USDA database. Average age, height, and weight of the subjects were 20.05 years, 162.13 cm and 54.38 kg, respectively. The subject's average intake of energy was 1645.67 kcal. The mean vitamin A, retinol and beta carotene intakes were 908.35 +/- 863.18 ug retinol equivalent/day, 199.19 +/- 166.00 ug/day and 3872.59 +/- 4972.17 ug/day, respectively. The 21.83% of the subjects consumed less than the Estimated Average Requirement (EAR) for vitamin A. And subjects consumed 141.69% of the Recommended Nutrient Intake (RNI) for vitamin A. Food groups consumed with high vitamin A content in our subjects included vegetables (423.96 ug RE/day), potato and starches (213.64 ug RE/day), cereals (62.60 ug RE/day), eggs (55.17 ug RE/day) and milks (53.45 ug RE/day). The major food sources of vitamin A were sweet potato, carrot, spinach, egg, and cereal, and the top 30 foods provided 89.57% of total vitamin A. Also animal-derived food provided 9.65% of the vitamin A intake from the top 30 foods. In conclusion, judging from RNI, the vitamin A intake of the Korean female university students in this study was generally adequate. The result of our study may be used as a basis for follow-up studies of vitamin A intake like assessment of vitamin A nutritional status or evaluation of carotenoid food sources in Korean young women.

This study was performed to assess the nutritional status and hair mineral content of children with behavioral problems and compare the values with a gender, age-matched control group. The subjects were recruited from S elementary school children in Seoul, Korea. Students scored higher than 60 points were diagnosed with behavioral problems according to the Korean-Child Behavior Checklist. Nutritional assessment of the two groups (behavior problem group: male n=15, female n=24; 9.6+/-1.6 years, control group: male n=16, female n=18; 9.5+/-1.9 years) was performed using a nutritional survey and by measuring hair mineral contents. In the results, food frequency questionnaire analysis showed that the intakes of anchovy (P<0.05), soybean curb (P<0.01), radish (P<0.05), bean sprouts (P<0.05), spinach (P<0.05), carrot (P<0.05), pumpkin (P<0.05), lettuce (P<0.05), cabbage (P<0.01), apple (P<0.05), and milk (P<0.01) were higher in the control group than the behavior problem group, whereas intakes of ramyeon (P<0.05), cookies (P<0.05), and coke (P<0.01) were higher in the behavior problem group than the control group. Intakes of most nutrients such as plant-derived protein (P<0.05), fiber (P<0.05), plant-derived calcium (P<0.05), phosphorus (P<0.05), plant-derived iron (P<0.05), vitamin B2 (P<0.05), vitamin B6 (P<0.05), vitamin C (P<0.01), vitamin E (P<0.05), and folate (P<0.05) were significantly higher in the control group than the behavior problem group. Hair analysis showed that the levels of arsenic (P<0.05), mercury (P<0.001), uranium (P<0.05), iron (P<0.001), boron (P<0.01), and germanium (P<0.001) were lower, but the levels of phosphate (P<0.05), chromium (P<0.001), sodium (P<0.05), and sulfur (P<0.001) were higher in the behavior problem group than the control group. Conclusively, behavioral problems constitute a complicated condition in which nutritional factors may play major roles. However, it is still under investigation as to whether or not modification of dietary habits or nutritional supplementation can improve children's behavior, since symptoms require a broad understanding of the environmental and genetic interactions.

Pot experiments were carried out to study the effects of lead [Pb] on growth of Amaranth, Chinese Amaranth and Spinach. Six levels of Pb [0, 20, 40, 60, 80 and 100 mg kg [-1]] were used in the pot experiments. Lead application in soil significantly decreased the number of leaves plant [-1] of Amaranth, Chinese Amaranth and Spinach. Shoot height and root length of the tested vegetables crops were also significantly decreased by Pb application except for root of spinach. The present decline in shoot height at 100 mg Pb kg[-1] soil treatment as compared to the control was about 57, 75 and 47% for Amaranth, Chinese Amaranth and Spinach, respectively. The reduction of root length of Amaranth and Chinese Amaranth was 34 and 59%, respectively at the highest rate of Pb application from that of the control. In general, a gradual decrease in shoot and root biomass of all the crops with increasing rates of Pb application was observed. Shoot and root biomass of amaranth were reduced by 49 and 45% respectively with 100 mg Pb kg[-1] soil treatment over control. The corresponding reductions for Chinese Amaranth were 27 and 48% and for Spinach were 39 and 45%, respectively

Pesticides are used for pest management and vector control in agricultural areas, but many farming communities are not adequately informed about the hazards associated with the chemicals. As a result, farmers use pesticides without full understanding of their impact on human health and the environment. Human contacts with pesticides, whether in the field, during pesticide application, weeding, pruning, harvesting, re-entry to collect fire wood, vegetables or in the houses for killing mosquitoes, cockroaches, fleas and flies. Storing pesticides may lead into acute and/or chronic exposures, with adverse health consequences. Although the inhalation, dermal and oral routes of exposure are the most common, pesticide residues in food and water may add to indirect exposures common in the general population. This study aimed to develop and evaluate a rapid automated screening method for determining pesticides residues in seven green vegetables [rocket, mint, parsley, leek, dill, lettuce and spinach] collected from different sources in Saudi Arabia markets. Thirty nine samples from green vegetables were used in this study. Six types of green vegetables were taken from the open markets [16 samples] and seven types were taken from supermarket [21 samples]. These samples were screened for pesticides residues by using Turbo Matrix Headspace Trap system in conjunction with a Perkin Elmer Clarus soo GC/MS. The classes of pesticides which are detected in this study are herbicides, rodenticides and fungicides. The obtained results revealed that the Dinitrotoluidine [l-hydroxy-4-[p-toluidine] anthraquinone] was detected in rocket and parsley, which are presents in supermarket but not found in mint, dill, lettuce and spinach. The oxadiazolinon [N, 0-dimethyloxos tephene] herbicide was found only in rocket purchased from open market. It was found that the dill obtained from the open market was the only plant which contains all kinds of rodenticides like cyano-phenolic [3-cyano-6-triflorom ethylphenantherine], sodium flouroacetate [3-methyI-1-phenyl-2- azafluorenone], hydrogen cyanide [l-cyano-6-trifloromethylphenantherine] and arsenical [arsine,l,2-phenylenebis dimethyl]. Hydrogen cyanides were detected in dill only. Identified types of pesticides have shown more occurrences in open market samples than the supermarket samples. The contamination level of pesticide residues considered a possible public health problem. Regular monitoring of a greater number of samples for pesticide residues, especially the imported is needed
